Fully Loaded Grain Bowl (Salad)
Let’s talk grain bowls – this fully loaded grain bowl will keep you satisfied all afternoon.
All bowls start with a great base of greens and grains. Feel free to swap out the below for yours of choice – arugula, spinach, brown rice, bulgar wheat would all work well. Next up – the veg – the combination of raw and roasted veg works well – here we have gone for tomatoes, red onion, avocado and sweet potato but broccolini, carrots, cucumber, squash would all work well. Finally – toppings – our favourite part – some of our go-tos almonds, sesame seeds, pita chips – here we have gone for some crushed cashews…
Kale
Quinoa
Cherry tomatoes
Red onion
Sweet potato
Avocado
Cashew nuts
Optional – dill & chives
Prepare your vegetables – cut the sweet potato into small cubes, slice your red onion and cherry tomatoes.Drizzle with olive oil, season with salt and pepper and bake for 20 – 25 minutes or until the sweet potato is soft.
Whilst the veg is baking – cook the quinoa on a low heat for 15 – 20 minutes - until the water evaporates and the quinoa is fluffy.
Building the perfect bowl – TOSS the kale in Sweet Tahini Chick, next add the quinoa, top with your roasted vegetables, sliced avocado, crushed cashews and fresh dill and chives if you are feeling fancy ;)
Drizzle over some extra Sweet Tahini Chick and enjoy!
Option to add protein of choice – chicken, tofu, eggs.
