Halloumi & Pearl Couscous (salad)

Pearl couscous or alternate wholegrain
Baby spinach
Cherry tomatoes
Mint leaves
Red onion
Halloumi cheese
Pomgramete seeds
Toasted pine nuts

In a pan of boiling water add your pearl couscous and cook for 8 – 10 minutes. Drain and run under cold water.
Mix your pearl couscous, baby spinach, cherry tomatoes, red onion and mint in a large bowl and TOSS with Viva La Vinaigrette.
Slice your halloumi into pieces and fry over medium heat for 3 minutes approx. until each side is golden. Place the halloumi on your salad and sprinkle with pomegramete seeds and toasted pine nuts. Drizzle over Viva La Vinaigrette, season with salt and pepper.
Optional – squeeze of lemon juice.
