Prawn Tortillas

Prawn Tortillas

Fresh, crunchy, and herby. Soft tortillas loaded with prawns, avocado, and a double hit of Green Goddess.

Time: 15 minutes

Ingredients

  • 200g prawns, peeled
  • 2 soft tortillas
  • ½ avocado, sliced
  • Handful of red or white cabbage, shredded
  • Pickles, sliced
  • Fresh cilantro, chopped
  • 3–4 tbsp Green Goddess Dressing
  • Olive oil, for frying
  • Salt & pepper

Method

  1. Heat a drizzle of olive oil in a pan and fry the prawns until pink and cooked through. Season lightly.
  2. Warm the tortillas. Spread a layer of Green Goddess on each.
  3. Layer avocado slices, shredded cabbage, cooked prawns, and pickles.
  4. Top with fresh cilantro and a final drizzle of Green Goddess.
  5. Fold or roll the tortillas and dive in!
