Sweet Potato Rounds with Chilli & Guacamole

Rich, smoky, and loaded – sweet potato rounds topped with chilli and a fresh Green Goddess finish.

Ingredients
- 2 large sweet potatoes, cut into thick rounds
- Olive oil, salt
Chilli:
- 250g beef mince
- 1 onion, chopped
- 1 garlic clove
- 1 carrot, diced
- 1 tin plum tomatoes
- 1 tsp chilli flakes
- 1 cube dark chocolate
To serve:
- 1 avocado + 2–3 tbsp Green Goddess
- Parsley, red onion, yoghurt
Method
- Roast sweet potato rounds (oil + salt) at 200°C for 25 mins.
- Cook onion, garlic, carrot, add beef until brown.
- Add in peeled plum tomatoes. Stir in dark chocolate, sprinkle chilli flakes and simmer for 90 minutes.
- Mix avocado with Green Goddess.
- Top potatoes with chilli, avocado mix, parsley, onion & yoghurt.
