Sweet Potato Rounds with Chilli & Guacamole

Rich, smoky, and loaded – sweet potato rounds topped with chilli and a fresh Green Goddess finish.

Ingredients

  • 2 large sweet potatoes, cut into thick rounds
  • Olive oil, salt

Chilli:

  • 250g beef mince
  • 1 onion, chopped
  • 1 garlic clove
  • 1 carrot, diced
  • 1 tin plum tomatoes
  • 1 tsp chilli flakes
  • 1 cube dark chocolate

To serve:

  • 1 avocado + 2–3 tbsp Green Goddess
  • Parsley, red onion, yoghurt

Method

  1. Roast sweet potato rounds (oil + salt) at 200°C for 25 mins.
  2. Cook onion, garlic, carrot, add beef until brown.
  3. Add in peeled plum tomatoes. Stir in dark chocolate, sprinkle chilli flakes and simmer for 90 minutes. 
  4. Mix avocado with Green Goddess. 
  5. Top potatoes with chilli, avocado mix, parsley, onion & yoghurt.
