Burrata Toasted Ciabatta

Ingredients

  • 1 ciabatta, sliced
  • Burrata or mozzarella
  • 1 large beef tomato, sliced
  • Handful of rocket
  • 2 tbsp pesto
  • Olive oil
  • Salt & pepper
  • 2–3 tbsp Viva La Vinaigrette

Method

  1. Brush ciabatta slices with olive oil and toast until golden.
  2. Spread pesto on both slices.
  3. Layer thick tomato slices and season well.
  4. Tear burrata over the tomatoes.
  5. Toss rocket with TOSS Viva La Vinaigrette and pile on top.
  6. Finish with an extra drizzle of vinaigrette.
  7. Close the ciabatta, press lightly and dive in!
