Corn Caesar Salad

Sweet charred corn, crisp greens and shaved parmesan tossed with TOSS King Caesar and finished with a generous sprinkle of PUNCH.
Serves: 2
Time: 15–20 minutes
Ingredients
2 ears sweet corn
1 little gem lettuce, chopped
1 large handful baby spinach
1 large handful rocket
1 shallot, thinly sliced
Juice of ½ lemon
30g parmesan, shaved
2–3 tbsp TOSS King Caesar
2 tbsp PUNCH Salad Topper
Method
Char the sweet corn on a BBQ, griddle pan or under a hot grill until lightly blackened.
Slice the kernels from the cob and leave to cool slightly.
Combine the little gem, spinach, rocket and shallot in a large bowl.
Add the charred corn and shaved parmesan.
Drizzle with TOSS King Caesar and gently toss to coat.
Finish with a generous sprinkle of PUNCH Salad Topper and serve immediately.
