Crispy Rice & Breaded Chicken

Golden crispy rice, chicken, and fresh greens tossed in Miso Magic.

Ingredients

  • 150g uncooked basmati rice
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 100g edamame beans
  • 200g breaded chicken
  • 1 medium avocado
  • 50g cucumber, sliced
  • 1 tbsp sesame seeds
  • 2–3 tbsp Miso Magic

Method

  1. Cook the rice according to package instructions. Drain well, then allow it to steam dry for a few minutes.
  2. Preheat oven to 220°C (fan 200°C). TOSS the rice with olive oil and soy sauce, spread onto a tray, and bake for 25–30 minutes until golden and crispy.
  3. Cook the breaded chicken according to package instructions. Heat or cook the edamame beans.
  4. Slice the avocado and cucumber.
  5. In a large bowl, combine crispy rice, chicken, edamame, avocado, and cucumber. TOSS everything with Miso Magic until evenly coated.
  6. Finish with a sprinkle of sesame seeds.
