Crispy Rice & Breaded Chicken

Golden crispy rice, chicken, and fresh greens tossed in Miso Magic.

Ingredients
- 150g uncooked basmati rice
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 100g edamame beans
- 200g breaded chicken
- 1 medium avocado
- 50g cucumber, sliced
- 1 tbsp sesame seeds
- 2–3 tbsp Miso Magic
Method
- Cook the rice according to package instructions. Drain well, then allow it to steam dry for a few minutes.
- Preheat oven to 220°C (fan 200°C). TOSS the rice with olive oil and soy sauce, spread onto a tray, and bake for 25–30 minutes until golden and crispy.
- Cook the breaded chicken according to package instructions. Heat or cook the edamame beans.
- Slice the avocado and cucumber.
- In a large bowl, combine crispy rice, chicken, edamame, avocado, and cucumber. TOSS everything with Miso Magic until evenly coated.
- Finish with a sprinkle of sesame seeds.
