Crispy Rice Waffle with Miso Salmon & Smashed Avocado

Golden, crunchy, and umami-packed – the perfect balance of crispy base, creamy avocado, and sticky miso salmon.

Ingredients

  • 1 cup cooked rice
  • 1 egg
  • 1–2 tbsp flour
  • 1–2 tbsp sesame seeds (optional)
  • Olive oil, for cooking
  • 200g salmon, cut into cubes
  • 2–3 tbsp Miso Magic
  • 1 ripe avocado
  • Salt & pepper

Method

  1. Preheat oven to 200°C. Toss salmon cubes with Miso Magic and bake for 12–15 minutes until cooked through and sticky.
  2. In a bowl, mix cooked rice, egg, flour, sesame seeds, and a pinch of salt until the rice sticks together.
  3. If you don't have a waffle machine. Heat a non-stick pan over medium heat with a little olive oil. Press portions of the rice mixture into the pan to form compact circles. Cook 4–5 minutes per side until golden and crispy.
  4. Mash avocado with a pinch of salt and pepper.
  5. Spread smashed avocado over the crispy rice waffles. Top with miso salmon cubes.
  6. Finish with extra Miso Magic and sesame seeds.
