Fully Loaded Grain Bowl

Earthy, warm, and piled high – a fridge-clearer that’s healthy, comforting, and absolutely not boring.

Ingredients

  • 1 sweet potato, cubed
  • 1 jar chickpeas, drained (@boldbeanco recommended)
  • 1 cup cooked quinoa
  • Big handful of kale
  • Red cabbage, finely sliced
  • Edamame beans
  • 1 avocado, cubed
  • Cauliflower florets
  • Feta, crumbled
  • 3–4 tbsp Sweet Tahini Chick
  • Olive oil, salt & pepper

Method

  1. Preheat oven to 200°C. Toss sweet potato, cauliflower, and chickpeas with olive oil and a pinch of salt. Roast for 25 minutes until golden.
  2. Cook quinoa until fluffy.
  3. Massage kale lightly with olive oil and a pinch of salt.
  4. Warm the edamame, slice the cabbage, cube the avocado.
  5. Build the bowl: start with quinoa, then layer roasted vegetables, chickpeas, kale, cabbage, edamame, and avocado.
  6. Sprinkle with feta.
  7. Drizzle generously with Sweet Tahini Chick – don’t hold back!
