Halloumi & Pearl Couscous Salad

Fresh, zesty, and golden – fluffy couscous, roasted peppers, and crispy halloumi finished with a vibrant Viva La Vinaigrette.

Ingredients
- 150g pearl couscous
- 100g halloumi, sliced
- ½ red onion, thinly sliced
- 2 roasted peppers, chopped
- Handful fresh parsley, chopped
- 1–2 tsp honey
- 3–4 tbsp Viva La Vinaigrette
- Olive oil, salt & pepper
Method
- Cook pearl couscous according to package instructions until fluffy.
- Slice halloumi and pan-fry in a drizzle of olive oil until golden and crispy on both sides.
- Thinly slice red onion and chop roasted peppers.
- TOSS couscous with Viva La Vinaigrette, red onion, roasted peppers, and honey.
- Plate the couscous mix and top with golden halloumi.
- Finish with chopped parsley and an extra drizzle of Viva La Vinaigrette.
