Halloumi & Pearl Couscous Salad

Fresh, zesty, and golden – fluffy couscous, roasted peppers, and crispy halloumi finished with a vibrant Viva La Vinaigrette.

Ingredients

  • 150g pearl couscous
  • 100g halloumi, sliced
  • ½ red onion, thinly sliced
  • 2 roasted peppers, chopped
  • Handful fresh parsley, chopped
  • 1–2 tsp honey
  • 3–4 tbsp Viva La Vinaigrette
  • Olive oil, salt & pepper

Method

  1. Cook pearl couscous according to package instructions until fluffy.
  2. Slice halloumi and pan-fry in a drizzle of olive oil until golden and crispy on both sides.
  3. Thinly slice red onion and chop roasted peppers.
  4. TOSS couscous with Viva La Vinaigrette, red onion, roasted peppers, and honey.
  5. Plate the couscous mix and top with golden halloumi.
  6. Finish with chopped parsley and an extra drizzle of Viva La Vinaigrette.
