Ingredients
- 2 slices thick-cut bread
- Crispy tofu
- ½ avocado, sliced
- ½ cucumber, sliced
- Handful lettuce
- 1 tomato, sliced
- Handful green beans, blanched or lightly steamed
- Crispy shallots
- 2 large squeezes Sweet Tahini Chick
Method
- Slice tofu into sandwich-sized slabs and marinate in Sweet Tahini Chick.
- Pan-sear until golden.
- Lightly toast the bread.
- Slice avocado and tomato, season lightly with salt & pepper.
- Spread tahini generously on both slices of bread.
- Layer lettuce, green beans, cucumber, tomato, tofu, avocado, and crispy shallots.
- Close the sandwich, press lightly, and bite in!
