Loaded Veggie Sando

Ingredients

  • 2 slices thick-cut bread
  • Crispy tofu
  • ½ avocado, sliced
  • ½ cucumber, sliced
  • Handful lettuce
  • 1 tomato, sliced
  • Handful green beans, blanched or lightly steamed
  • Crispy shallots
  • 2 large squeezes Sweet Tahini Chick

Method

  1. Slice tofu into sandwich-sized slabs and marinate in Sweet Tahini Chick.
  2. Pan-sear until golden.
  3. Lightly toast the bread.
  4. Slice avocado and tomato, season lightly with salt & pepper.
  5. Spread tahini generously on both slices of bread.
  6. Layer lettuce, green beans, cucumber, tomato, tofu, avocado, and crispy shallots.
  7. Close the sandwich, press lightly, and bite in!
