Miso Glazed Cod

Miso Glazed Cod

Light, fresh, and full of umami. Flaky cod with crisp veg and a glossy miso finish.

Time: 30 minutes

Ingredients

  • 2 cod fillets
  • 3–4 tbsp Miso Magic
  • 1 carrot, ribboned
  • 1 avocado, sliced
  • ½ cucumber, sliced
  • Handful edamame beans
  • 1 chilli, finely sliced
  • Olive oil, salt & pepper

Method

  1. Preheat oven to 200°C.
  2. Brush cod fillets generously with Miso Magic and place on a lined tray.
  3. Bake for 12–15 minutes until cooked through and flaky.
  4. Meanwhile, prepare the vegetables: ribbon the carrot, slice avocado and cucumber, and warm the edamame.
  5. Plate the cod with the fresh vegetables. 
  6. Finish with sliced chilli and an extra drizzle of Miso Magic.
