Miso Glazed Cod

Light, fresh, and full of umami. Flaky cod with crisp veg and a glossy miso finish.

Time: 30 minutes
Ingredients
- 2 cod fillets
- 3–4 tbsp Miso Magic
- 1 carrot, ribboned
- 1 avocado, sliced
- ½ cucumber, sliced
- Handful edamame beans
- 1 chilli, finely sliced
- Olive oil, salt & pepper
Method
- Preheat oven to 200°C.
- Brush cod fillets generously with Miso Magic and place on a lined tray.
- Bake for 12–15 minutes until cooked through and flaky.
- Meanwhile, prepare the vegetables: ribbon the carrot, slice avocado and cucumber, and warm the edamame.
- Plate the cod with the fresh vegetables.
- Finish with sliced chilli and an extra drizzle of Miso Magic.
