Miso Glazed Salmon Bowl

Sweet, salty, and sticky – a 15-minute midweek dinner.

Time: 15 minutes

Ingredients

  • 2 salmon fillets, cut into chunks
  • 1 cup rice
  • 3–4 tbsp Miso Magic
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • Squeeze of lime
  • Handful chives, chopped
  • Handful cashews, crushed

Method

  1. Preheat oven to 200°C. Toss salmon chunks with Miso Magic, then place on a lined tray and bake for 15 minutes until sticky and golden.
  2. Meanwhile, cook rice until fluffy.
  3. In a small bowl, whisk together extra Miso Magic, soy sauce, honey, and a squeeze of lime.
  4. Plate the rice, top with glazed salmon, and drizzle over the dressing.
  5. Finish with a sprinkle of salt, crushed cashews, and fresh chives.
