Miso Roasted Cauliflower & Tofu Bowl

Umami-rich, fresh, and nourishing. Roasted cauliflower and tofu on fluffy rice with crisp toppings. A perfect plant-based bowl.

Time: 25–30 minutes

Ingredients

  • 1 cup rice
  • 1 small cauliflower, cut into florets
  • 200g tofu, cubed
  • 3–4 tbsp Miso Magic
  • 1 avocado, sliced
  • Handful edamame beans
  • ½ cucumber, sliced
  • Sesame seeds
  • Olive oil, salt & pepper

Method

  1. Preheat oven to 200°C.
  2. Toss cauliflower and tofu with Miso Magic, salt, and pepper.
  3. Spread on a tray and roast for 20–25 minutes until golden and caramelised.
  4. Meanwhile, cook rice until fluffy.
  5. Assemble bowls with rice, roasted cauliflower, and tofu.
  6. Top with avocado, edamame, cucumber, and a sprinkle of sesame seeds.
