Miso Roasted Cauliflower & Tofu Bowl

Umami-rich, fresh, and nourishing. Roasted cauliflower and tofu on fluffy rice with crisp toppings. A perfect plant-based bowl.

Ingredients
- 1 cup rice
- 1 small cauliflower, cut into florets
- 200g tofu, cubed
- 3–4 tbsp Miso Magic
- 1 avocado, sliced
- Handful edamame beans
- ½ cucumber, sliced
- Sesame seeds
- Olive oil, salt & pepper
Method
- Preheat oven to 200°C.
- Toss cauliflower and tofu with Miso Magic, salt, and pepper.
- Spread on a tray and roast for 20–25 minutes until golden and caramelised.
- Meanwhile, cook rice until fluffy.
- Assemble bowls with rice, roasted cauliflower, and tofu.
- Top with avocado, edamame, cucumber, and a sprinkle of sesame seeds.
