Miso Salmon Sourdough

Sweet, savoury, and packed with fresh flavour - miso glazed salmon, served on toasted sourdough with a fresh and zesty cucumber salad.
Serves: 2
Time: 15–20 minutes
Ingredients
2 salmon fillets
2 slices sourdough
2 tbsp Miso Magic
For the cucumber salad
½ cucumber, sliced
2 spring onions, finely sliced
Handful of coriander, chopped
Zest and juice of ½ lime
1 tsp honey
2 tbsp coconut milk
Pinch of salt
Pinch of chilli flakes
1 tsp sesame seeds
Method
TOSS salmon in Miso Magic and air fry at 200°C for 15 minute until glazed and cooked through.
Meanwhile, combine the cucumber, spring onions, coriander, lime zest and juice, honey, coconut milk, salt, chilli flakes, and sesame seeds in a bowl.
Toast the sourdough until golden.
Place the toasted sourdough on serving plates, top with the glazed salmon and cucumber salad, then finish with an extra spoonful of Miso Magic.
