Panzella Summer Side-Dish

A vibrant summer salad packed with juicy tomatoes, marinated artichokes, olives, fresh basil and crunchy croutons, all tossed in TOSS Viva La Vinaigrette.
Serves: 4–6 (as a side)
Time: 15 minutes
Ingredients
400g mixed tomatoes, chopped and halved
120g marinated artichoke hearts, drained and sliced
75g black olives
½ cucumber, sliced into half moons
4 tbsp pickled red onions
2 handfuls fresh basil leaves
75g rustic croutons or toasted sourdough, torn into chunks
3–4 tbsp TOSS Viva La Vinaigrette
Salt and black pepper
Method
Add the tomatoes, artichokes, olives, cucumber and pickled red onions to a large serving bowl.
Pour over the TOSS Viva La Vinaigrette and gently toss until everything is evenly coated.
Fold through most of the basil leaves and croutons, reserving a few for garnish.
Leave to sit for 5 minutes so the croutons soak up some of the dressing while retaining their crunch.
Transfer to a serving platter and finish with the remaining basil leaves, extra croutons and a final drizzle of Viva La Vinaigrette.
Serve alongside grilled fish, chicken or as part of a summer sharing feast.
