Pea, Edamame & Feta Salad

The quickest high-protein lunch dish. 

Serves: 2
Time: 10 minutes

Ingredients

125g edamame beans, blanched
125g peas, blanched
100g feta, crumbled
Zest and juice of 1 lemon
Small handful fresh mint, chopped
1 red chilli, deseeded and finely sliced
2–3 tbsp TOSS Viva La Vinaigrette

Method

Add the edamame, peas and feta to a large bowl.

Stir through the lemon zest, lemon juice, fresh mint and chilli.

Drizzle generously with TOSS Viva La Vinaigrette and gently toss until everything is evenly coated.

Transfer to a serving bowl and finish with an extra drizzle of Viva La Vinaigrette.

Serve alongside grilled fish, chicken or enjoy straight from the bowl with a spoon.
