Shredded Chicken & Miso Noodles

Quick, vibrant, and packed with flavour.

Ingredients

  • 200g cooked shredded chicken
  • 150g rice noodles
  • ½ cup edamame beans
  • 1 carrot, ribboned
  • ½ tsp chilli flakes 
  • 1–2 tbsp Miso Magic 
  • Olive oil

Method

  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. Warm shredded chicken in a pan with a drizzle of olive oil and a sprinkle of chilli flakes.
  3. Lightly steam or blanch edamame beans and prepare carrot ribbons.
  4. Toss cooked noodles with chicken, edamame, and carrot ribbons.
  5. Season with soy sauce or a drizzle of Miso Magic for extra umami.
  6. Serve with an extra pinch of chilli flakes.
