Super-Seed, Sweet Potato & Egg Fritter

Golden sweet potato and super-seed fritters topped with a perfectly cooked egg and finished with a drizzle of TOSS.

Ingredients
1 medium sweet potato, grated
2 eggs
3 tbsp PUNCH super seeds
2 tbsp plain flour
1 spring onion, finely sliced
Salt and pepper
1 tbsp olive oil
2 eggs, for serving
2–3 tbsp TOSS King Caesar or Green Goddess (take your pick)
Method
Grate your sweet potato and squeeze out any excess moisture in a kitchen towel.
In a bowl, combine the sweet potato, 2 eggs, flour, spring onion, salt and pepper.
Heat the olive oil in a frying pan over medium heat. Divide the mixture into 4 fritters and cook for 3–4 minutes on each side until golden and crisp.
Meanwhile, cook the remaining eggs – poached, fried, or soft-boiled all work.
Plate the fritters, top with the eggs and a sprinkle of PUNCH super seed mix.
Finish with a generous drizzle of TOSS.
