Crispy Gnocchi

Ingredients
- Gnocchi
- 1 cucumber, diced
- 1 red pepper, diced
- ½ red onion, diced
- Handful of parsley, chopped
- 3–4 tbsp Sweet Tahini Chick
- 2–3 tbsp Greek yoghurt
- Olive oil, salt & pepper
Method
- Preheat oven to 220°C.
- Spread gnocchi on a baking tray, drizzle with olive oil, season, and roast for 12–15 minutes until golden and crispy, shaking halfway.
- Chop cucumber, pepper, red onion, and roughly chop parsley.
- In a bowl, swirl Sweet Tahini Chick with Greek yoghurt until creamy and smooth.
- TOSS the hot gnocchi with the veggies, herbs, and tahini-yoghurt sauce.
- Finish with extra parsley and enjoy!
