Crispy Gnocchi

15-minute midweek winner - crispy, creamy, and full of herby, nutty goodness.

Ingredients

  • Gnocchi
  • 1 cucumber, diced
  • 1 red pepper, diced
  • ½ red onion, diced
  • Handful of parsley, chopped
  • 3–4 tbsp Sweet Tahini Chick
  • 2–3 tbsp Greek yoghurt
  • Olive oil, salt & pepper

Method

  1. Preheat oven to 220°C.
  2. Spread gnocchi on a baking tray, drizzle with olive oil, season, and roast for 12–15 minutes until golden and crispy, shaking halfway.
  3. Chop cucumber, pepper, red onion, and roughly chop parsley.
  4. In a bowl, swirl Sweet Tahini Chick with Greek yoghurt until creamy and smooth.
  5. TOSS the hot gnocchi with the veggies, herbs, and tahini-yoghurt sauce.
  6. Finish with extra parsley and enjoy!
