Tahini and Chocolate Chip Cookies

Nutty, chewy, and studded with chocolate – tahini takes these cookies to the next level.

Serves: 12 cookies
Time: 25–30 minutes

Ingredients

  • 125g unsalted butter, softened
  • 100g brown sugar
  • 50g caster sugar
  • 1 large egg
  • 2–3 tbsp Sweet Tahini Chick
  • 1 tsp vanilla extract
  • 175g plain flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 150g chocolate chips

Method

  1. Preheat oven to 180°C and line a baking tray with parchment.
  2. Cream the butter with sugars until light and fluffy.
  3. Beat in the egg, Sweet Tahini Chick, and vanilla extract.
  4. In a separate bowl, mix flour, baking soda, and salt. Gradually fold into the wet mixture.
  5. Stir through the chocolate chips.
  6. Scoop cookie dough onto the tray (roughly golf-ball sized) and flatten slightly.
  7. Bake 10–12 minutes until golden at the edges but still soft in the middle.
  8. Cool on the tray for 5 minutes, then transfer to a wire rack.
