Vegetable Gnocchi with Golden Halloumi

Quick, hearty, and satisfying – crispy halloumi, gnocchi, and vibrant veggies in one bowl. Perfect for a fast midweek dinner.

Ingredients
- 250g gnocchi
- 100g halloumi, sliced
- Handful of spinach
- 200g cherry tomatoes, halved
- Olive oil
- Salt & pepper
- Fresh basil
Method
- Heat a drizzle of olive oil in a pan and fry halloumi slices until golden and crispy. Remove and set aside.
- In the same pan, lightly fry gnocchi until golden on the edges.
- Add cherry tomatoes and spinach, cooking briefly until spinach wilts and tomatoes soften slightly.
- Return halloumi to the pan and toss gently to combine.
- Season with salt and pepper, and finish with fresh basil.
