Vegetable Gnocchi with Golden Halloumi

Quick, hearty, and satisfying – crispy halloumi, gnocchi, and vibrant veggies in one bowl. Perfect for a fast midweek dinner.

Ingredients

  • 250g gnocchi
  • 100g halloumi, sliced
  • Handful of spinach
  • 200g cherry tomatoes, halved
  • Olive oil
  • Salt & pepper
  • Fresh basil

Method

  1. Heat a drizzle of olive oil in a pan and fry halloumi slices until golden and crispy. Remove and set aside.
  2. In the same pan, lightly fry gnocchi until golden on the edges.
  3. Add cherry tomatoes and spinach, cooking briefly until spinach wilts and tomatoes soften slightly.
  4. Return halloumi to the pan and toss gently to combine.
  5. Season with salt and pepper, and finish with fresh basil.
